Back to school. Those 3 little words ring bells of joy to many Mums around Australia. The 2 weeks of school holiday craziness comes to a blissful end and life returns to a state of semi-normalcy.

If you are like me and you love nothing more than to start the back to school party with a bang, you get all excited the Sunday before with baking. Cakes, slices, cookies or anything that can survive the 4 hours or so locked in a plastic container.

School lunch box treats put a smile on any kids face and instil a sense of reassurance that as a mum, you know what your kids are eating. Baking with the kids is also a good way to get them back into school mode as well. It’s a fun activity that you can do together on Sunday afternoon before school goes back. Passing some much needed time and teaching them the value of wholesome home-cooked food. 

As a mum to 3 kids, I know how fussy they can be. I have tried many recipes and ideas, but some are just bigger hits than others. I like to try and make healthy options with whole grains and little sugar, but I am not against the odd cake or cookie treat either. My motto is all in moderation. 

These are our top 6 back to school lunchbox snacks that are a hit in the Miss Isobel household. Oh, and did we mention they are super easy and Mum friendly too!

 

Weetbix Slice

I love this recipe because it is so easy to make and the kids can help. I also love the fact that weetbix replace the use of processed flour, so whilst they are still a sweet treat, there is a bit more nutritional value in there. There are a few recipes around, but I this is my favourite as it is a one bowl mix. The chocolate on top is a yummy addition, but not necessary if you are wanting to lessen the sugar and calorie hit.

Honey and Oat Bars

Muesli bars have been a popular school lunch box snack for decades, well ever since I can remember anyway. I love giving them to the kids, but I just feel there are a few too many unnecessary added ingredients in there. I came across this amazingly easy recipe for honey and oat bars and it has just the essentials. Honey is the sweetener so there is no added processed sugar which is another plus. The best part is you will probably have all these ingredients in your pantry and they can even be frozen.  

Choc Chip Cookies

No link for this one, if you are looking for the easiest choc chip cookie recipe that you can literally whip up in 5 minutes, then the look no further than the recipe on the side of the Nestle Milk Bits packet! Yes, that’s right. The little red choc chip packet you can pick up from any supermarket. The choc chip cookie recipe on the side is a 5 ingredient delight that will give you perfect cookies every time. I like to cook them a little less so they are soft and gooey in the middle. Yummo!

Classic Vanilla Biscuits

Nothing beats a classic vanilla biscuit. Simple, yummy and perfect for getting the kids involved. I always let my kids’ little imaginations run wild decorating the cookies with their favourite lollies, sprinkles and fun coloured icing. My daughter is into all things unicorn at the moment (who isn’t?) so pink and purple is the order of the day!

Banana and Oat Muffins 

I don’t know about you, but I always end up with a couple of over ripe bananas at the end of each week. It’s like once they start to turn, the kids turn up their noses at them. The best and easiest way I have found to not let a good banana go to waste is muffins. The kids will devour those in no time at all! This recipe is quick, easy and only has ¼ cup sugar.

Nutella Choc Chip Cookies 

Just because we can. There is nothing overly healthy with this recipe, but it’s nutella, so we just had to include it! It is one that you will love with an afternoon coffee just as much as the kids do in their lunchbox! Easy to make with just 7 ingredients and one bowl. Nutella and one bowl, what is not to love!
